According to Volek and Phinney in the Art and science of low carbohydrate living it takes about 12 weeks to become fat adapted. However this was in elite athletes. Your physiological response may vary considerably.
Consider the following:
-Are you counting your macros (carbs, proteins, and fats) daily?
-How long in the diet are you?
-When you are calculating carbs are you doing net or total?
-Dr Eric Westman is a fan of under 20g total. You might want to dial down the carbs just a little.
